Whole Wheat Flax & Apple Muffins

The following recipe is adapted from the back of a Hodgson Mill~ Milled Flax Seed box. Of course, they recommend you use their brand of products. This will make 12 yummy muffins.

Preheat 400

1/4 cup milled flax seed

3/4 cup whole wheat graham flour

3/4 cup naturally white (or wheat) flour

1/2 cup sugar

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg, beaten

1 1/2 cups finely chopped apples

1/2 cup nuts (I substituted hemp seeds)

3 tbls vegetable oil

1/2 cup milk

Blend dry ingredients together in a bowl. In a separate bowl combine egg, oil, and milk. Add dry ingredients to egg mixture and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well-greased muffin cups 2/3 full. Bake for about 18-20 minutes.

I know I do not drink enough water. I pretty much live off of coffee and diet coke with the occasional tea or fruit juice. Oh…and the milk in my many bowls of cereal.

While  grocery shopping earlier, I came across these nifty giant sized 3 liter water bottles. I was being prayerful as I shopped…asking my Father what I should buy…and I believe He said I should drink one of these a day. So, I am going to give it a try for a week.

Anyone else want to join me? The benefits are awesome (so I’ve heard) =) If you are into it, leave a comment so I know if anyone else is doing it too.

Faith Folk Cafe Featured Me Today

What an honor! I am the Featured Artist over at FAITH FOLK CAFE. They made me feel so special.

Today was just one of those days…I think I have been hung-over from the ginormous $6 piece of dark chocolate decadence cake I ate yesterday. I was about 4 or 5 days off of bad sugars and I gave in! I didn’t even see it coming…I was feeling pretty good and making really healthy eating choices. Then…I passed by a dessert display case and got weak in the knees. These cakes were ART! Usually, I would not recommend eating art…BUT, well…you get the idea. I do not handle sugar well (it gives me headaches, makes me irritable, depressed, and cravey), but I am addicted and find it incredibly difficult to give up.  I know I will eventually overcome. I’ve gotten over much worse.

OK! All that to say, I was not feeling well today. But, when I saw the post on FAITH FOLK CAFE my spirits were lifted! What a warm welcome and a lovely layout! That music was very beautiful too. Three cheers for Mystele! Thanks again.
